Kale Chips

I sometimes buy more produce than I actually need.  I have a pet peeve of being wasteful with food. And to make matters worse, I am obsessed with finding ways to eat junk food, without it actually being junk food.  All this being said, I had way too much Kale.  So I brainstormed and thought….what about baking the kale?  Sounds crazy right?!?  Well, it was a brilliant idea and is my new addiction, instead of potato chips!

Preheat the oven to 350 degrees.

1.Wash and remove the stems from 2 bunches of kale.

2.Toss about 4 cups of torn Kale with 1 tsp olive oil(I used 1/4 tsp of truffle oil as well to give it a deeper aromatic taste of deliciousness) and 1/4 tsp sea salt in a large glass bowl.

3.Spread the Kale in an even layer on a large wire rack that stands on top of a large baking sheet.

4.Bake in oven for 15 minutes or until Kale is crisp.

I served it plain, but you can use it to add a lil something special to top your boring salad!  Now I go to the produce section instead of the potato chip aisle when I want potato chips!! The ultimate potato chip alternative, without all the carbs!

Ism…The idea of eating healthy junk food makes me excited to eat vegetables!  Try it out on your family and see for yourself!
