Fish Pockets

I have been coming up with different recipes that my daughter Aires can help with. This one she can make all on her own!…well, with me watching close by.
You can choose any fish such as Tilapia, Dover Sole, Whitefish, even Salmon!
1. Preheat the oven to 400 degrees.
2.Rip large pieces of parchment paper for each piece of fish.
3.In each center of parchment paper, place the 3-5oz fish in the middle of the paper. Season with a dash of garlic salt and pepper.
4.Add whatever veggies you want! We used 1 garlic clove, leeks, carrots, capers, red pepper, and zucchini. Drizzle 1 tsp of lemon juice and olive oil on top. We seasoned it with more salt and pepper.
5.Fold the paper closed and make sure to fold the sides in as well, so the fish is fully enclosed.
6.Place the fish pockets on a baking sheet and put them into the oven for 14 minutes. If you are using Salmon, or Tuna please allow 2-4 more minutes of baking time.
Presto! An easy, quick, and healthy meal that you can make with your kids! And the best part about it is the presentation is impressive to all your dinner guests.
Ism… Being creative about what you cook for dinner can also turn into quality time spent with your kids! I love helping my daughter in the kitchen, giving her an opportunity to get more comfortable and confident in the kitchen.
