			<content:encoded><![CDATA[<p>I am always challenged to come up with creative ways to disguise left overs.  This recipe is tested and approved by a very picky child and Dad who <strong>&#8220;Never&#8221; </strong>eat leftovers!!&#8230;sssh!</p>
<p>1.Preheat the oven to 350 degrees.</p>
<p>2.Line a baking sheet with foil.</p>
<p>3.Heat 2tbsp olive oil in a frying pan. Once the oil is heated, add 1 small chopped onion and 1tsp minced garlic.</p>
<p>4.Add 1 cup of thawed frozen spinach to pan and cook until spinach is tender.(about 3 minutes)</p>
<p>5.Stir in 1 cup of cooked left over rice, 1/2 cup of grated parmesan cheese, 1 egg into spinach mixture. Season with pepper and salt.</p>
<p>6.Once mixture is stirred thoroughly, scoop 1 tablespoon full and drop onto the baking sheet.  Make sure to mold into round shapes (almost like a golf ball.)</p>
<p>7.Bake the rice for 20 minutes.</p>
<p>I served the rice balls with marinara sauce and an alfredo sauce.  Everyone LOVED the food, (which I have to say was quite filling!) and no one was the wiser that they were devouring left overs!!!!</p>
<p><strong><em>Ism&#8230;just because you have left overs doesn&#8217;t mean you have to eat them the same boring old way!  Think outside the box and try something new with something left over. Left over&#8217;s can be very exciting!</em></strong></p>

<p>You can choose any fish such as <em>Tilapia, Dover Sole, Whitefish</em>, even<em> Salmon!</em></p>
<p><em><span style="font-style: normal;">1. Preheat the oven to 400 degrees. </span></em></p>
<p><em><span style="font-style: normal;">2.Rip large pieces of parchment paper for each piece of fish. </span></em></p>
<p><em><span style="font-style: normal;">3.In each center of parchment paper, place the 3-5oz fish in the middle of the paper.  Season with a dash of garlic salt and pepper. </span></em></p>
<p><em><span style="font-style: normal;">4.Add whatever veggies you want!  We used 1 garlic clove, leeks, carrots, capers, red pepper, and zucchini.  Drizzle 1 tsp of lemon juice and olive oil on top.  We seasoned it with more salt and pepper.</span></em></p>
<p><em><span style="font-style: normal;">5.Fold the paper closed and make sure to fold the sides in as well, so the fish is fully enclosed. </span></em></p>
<p><em><span style="font-style: normal;">6.Place the fish pockets on a baking sheet and put them into the oven for 14 minutes.  If you are using Salmon, or Tuna please allow 2-4 more minutes of baking time. </span></em></p>
<p>Presto! An easy, quick, and healthy meal that you can make with your kids! And the best part about it is the presentation is impressive to all your dinner guests.</p>
<p><strong><em>Ism&#8230;</em></strong> <strong><em>Being creative about what you cook for dinner can also turn into quality time spent with your kids!  I love helping my daughter in the kitchen, giving her an opportunity to get more comfortable and confident in the kitchen. </em></strong></p>

			<content:encoded><![CDATA[<p>I sometimes buy more produce than I actually need.  I have a pet peeve of being wasteful with food. And to make matters worse, I am obsessed with finding ways to eat junk food, without it actually being junk food.  All this being said, I had way too much Kale.  So I brainstormed and thought&#8230;.what about baking the kale?  Sounds crazy right?!?  Well, it was a brilliant idea and is my new addiction, instead of potato chips!</p>
<p>Preheat the oven to 350 degrees.</p>
<p>1.Wash and remove the stems from 2 bunches of kale.</p>
<p>2.Toss about 4 cups of torn Kale with 1 tsp olive oil(I used 1/4 tsp of truffle oil as well to give it a deeper aromatic taste of deliciousness) and 1/4 tsp sea salt in a large glass bowl.</p>
<p>3.Spread the Kale in an even layer on a large wire rack that stands on top of a large baking sheet.</p>
<p>4.Bake in oven for 15 minutes or until Kale is crisp.</p>
<p>I served it plain, but you can use it to add a lil something special to top your boring salad!  Now I go to the produce section instead of the potato chip aisle when I want potato chips!! The ultimate potato chip alternative, without all the carbs!</p>
<p><strong><em>Ism&#8230;The idea of eating healthy junk food makes me excited to eat vegetables!  Try it out on your family and see for yourself!</em></strong></p>

LOL&#8230; funny part was that everyone that was looking at me crazy for snapping a photo of myself as myself didn&#8217;t connect THAT was me!!!</p>

<p>One of the producer&#8217;s thought that I might want this photo from behind the scenes.  Funny, I love everything except myself!  What&#8217;s up with my stance?  HILARIOUS!!!  Why everyone was able to keep a straight face is beyond me&#8230;.*(note to self, the cowboy riding a horse stance is not sexy!)<br />
