Secret “Pantates” (Toddler for Pancakes)
Pancakes are probably my families favorite breakfast. My toddler would argue the best meal he has ever had. He wakes up in the morning and shouts out, “Pan Tates” Not “Good Morning mommy!” I think he must dream about them, he loves them so much. My approach with pancakes is a love hate relationship…I love that I never have issues feeding my kids pancakes, yet I HATE how they aren’t the healthiest choice for a meal. So I created my own rules with them. Make it healthy and make sure they taste AMAZING. This recipe derived from countless hours of trial and error, is what I think is the best tasting “healthy” pancakes I have tasted in a while. My friends whom never made pancakes started making these for their tribe and pancakes are now a ritual for breakfast! I can’t wait to hear what you think of them!
• 1 cup of spelt flour
• 1/2 cup of rolled oat flour
• 3 tbs of flax seed flour
• 2 tbs of coconut shavings
• 1 tbs of chia seeds
• 1 tsp of baking soda
• 1 tsp baking powder
• 2 tsp of cinnamon
• 1/4 tsp of pumpkin spice
• 1 cup of almond milk (I like Almond Breeze)
• 3/4 cup of coconut water ( I like Zico)
• 2 tbs of melted salted butter
• 4 tbs of applesauce (try a Plum Organics pouch with beets and carrots or spinach and pears)
• 1 tsp of vanilla paste
• 1 tbs of agave syrup or honey
• 1 egg or 1/2 cup of yogurt (plain or vanilla)
• 1 banana, chopped
Mix all the dry ingredients in a bowl. Whisk the wet ingredients in another bowl. Slowly add dry ingredients as you whisk. Whisk until the consistency is just right (tip: pick up the whisk and drippings should immediately dissolve back into batter). Now add the bananas.
Heat pan over medium-high he at. Butter the pan. Pour batter into pan until you get your desired size. 5-6 inches in diameter are a good size and easy to flip. When bubbles start to form, flip over the pancake. Re-butter pan if necessary.
Add 3 or 4 chocolate chips or carob chips while the first side is cooking to trick the youngins into eating these healthy pancakes! Serve with syrup. You can also add fresh berries to dress the plate.
